Parsnip

Pastinaca sativa

A true Ohio winter vegetable. They need the whole season and taste best after the ground freezes.

When to plant in Ohio
Direct sow April as soon as soil can be worked
Harvest window
After hard frost in November, or overwinter and dig in March
Days to maturity
110–130
Spacing
3–4 in.
Light
Full sun

How to grow it

Use fresh seed every year—old seed germinates poorly. Keep the row moist for 3 weeks. Thin and forget them until November. Mulch so you can still dig in frozen ground, or mark the row and harvest in the first March thaw.
