Spinach

Spinacia oleracea

Bolts the moment Ohio hits 80°F. Treat it as a short, lush spring and fall crop.

When to plant in Ohio
Direct sow March and again late August to mid-September
Harvest window
April–May; October, and overwintered plants in March
Days to maturity
37–50
Spacing
3–4 in.
Light
Full sun in spring and fall

How to grow it

Sow ½ in. deep as soon as soil thaws. Bloomsdale Long Standing is a standard. A September sowing under low tunnels often overwinters for an early March cut. Keep soil moist; dry plants get sandy and bolt.
