Cauliflower
Brassica oleracea var. botrytis
Less forgiving than broccoli. Fall plantings in Ohio make tighter, whiter heads.

How to grow it
Never let transplants get root-bound or dry—stress causes buttoning. Blanch white types by tying leaves over the curd when it is egg-sized. Colored types (cheddar, graffitti) skip blanching and handle weather better.
